Have you ever baked a rainbow cake with your kiddos? My little poppets happen to love and adore making rainbow cakes, and I happen to adore eating rainbow cakes! however, now with the temps in the upper 80's and 90's, I don't like to heat up my house with the oven on for hours baking the most beautiful rainbow cakes on the planet.

The poppets put on their thinking caps and we decided to keep the rainbow theme going and bring it into a cool tasty treat for our summer taste buds. We went to the store and purchased every color of jello possible along with the biggest tub of COOL WHIP Whipped Topping that we could find and brought them home and spent the day making rainbow jello!

The children had so much fun creating their own jello master pieces. They were super easy to make and turned out delicious and refreshing, especially when we added a couple {or three or four} of dollops of COOL WHIP. These COOL WHIP and jello rainbows are the perfect summer treat!

COOL WHIP Rainbow Jello

INGREDIENTS

1 3 oz box of jello for each color you want {cherry, grape, blueberry, lime, lemon and orange}

1 large tub of COOL WHIP

sprinkles

INSTRUCTIONS

1} Prepare yellow {or whatever color you want on the bottom} jello as directed, using the quick chill method.

2} Pour jello into dessert dishes {I used ice cream dishes and they were a bit too small}.

3}Put dishes in the refrigerator and chill for 15-30 minutes, or until slightly set.

4}Carefully smooth a dollop of COOL WHIP on top of the slightly set yellow jello already in the dishes.

5}Repeat process for each color.

Once set, top with some additional COOL WHIP and sprinkles.

Since I gave the kiddos a dish that was a tad bit too small for all the colors of the jello and the COOL WHIP I decided to make the cherry jello with some cherry pie filling and and add a scoop to the top of the rainbow jello. {Simply add cherry pie filling to your quick chill method cherry jello and cool and set}

The last four layers of jello seem to blend together in our dishes, but they are there. If you use a larger dish, your rainbow jello will look so beautiful!

The rainbow jello is not difficult, but it does takes some time and attention. My advice is simply to prepare each color separately and only after your previous jello layer has set.
