Best.Curry.Ever: Chicken Curry Recipe

This is a phenomenal curry, earthy and mellow rather than sour and hot, although if you want heat you can add plenty with some fresh chili peppers (my husband has a death wish and would love red chilies, but I want to eat too). The spices within - including Cumin, Cardamom, Star Anise, Aniseed, Candlenut, Cinnamon, and of course, Curry - add delicious, nutty flavor and a gorgeous aroma. And, it's pathetically easy to make. Cook this curry as soon as you possibly can. You won't be disappointed!

Aniseed (half a tsp)

Cumin (half a tsp)

Cinnamon (1 medium stick or half a tsp)

Clove (1 tsp) (this I omit because I do not care for cloves)

Cardamom (1 tsp)

Star anise (2 pcs)

(Grind them to a paste)

Garlic (3-4 pcs)

Ginger (1-1.5 inch)

Shallots (5-6 pcs)

Candlenut (1 pc)

(Mixed with a little water into a fine paste)

Chicken or Meat Curry Powder (2 - 2.5 tbsp)

It all depends on how spicy you want it to be.

If you can't find meat curry powder, use yellow, green or red curry paste to suit your palate.

1/2 lb. boneless chicken breast

2 peeled potatoes

1 cup coconut milk

2 tbsp. fish sauce

1 tsp. brown sugar

10 sweet basil leaves

3 kaffir lime leaves (if you can find them, don't worry if you can't)

1 stalk of lemongrass (you can use dried)

1/2 shredded bamboo shoots

First, heat your pot than place in the cooking oil, once the cooking oil is heated put in dry spices, stir-fry for about 1 to 2 seconds or until frangrant. Than put in the wet ingredients, stir-fry until slightly brown and then mix in the curry paste, stir-fry for about 1 minute. Put the chicken & potatoes in and mix well with all the ingredients that is in the pot. Stir in the coconut milk and salt to taste.Simmer until the meat & potatoes are cooked. Do not cover or your sauce will become too thin.

Serve with Jasmine or Basmati rice, which are not too sticky. I also usually make sauted spinach leaves with this. Delicous. Remove all the stems from the spinach leaves first. Saute it in very hot veg oil, when the oil starts to smoke, throw in the spinach, stir round, add salt and a little chicken bullion powder. And that's it. Don't cover just stir and it should taste good. Just make sure there's enough oil--maybe a little more than you think is needed.
