LEPRECHAUN CHOW SNACK MIX

For a festive St. Patrick's Day Snack this year, make this super quick and easy (Puppy) Chow Snack Mix using cereal, peanut butter, and white chocolate melting buttons. I have to be honest and say I never even knew what Puppy Chow Snack Mix was until I think last year. My SIL had to explain to me what it was because I had never heard of it and I have never tasted it either. After she explained to me what it was, I simply had to make some, and what better time than on St Patrick’s Day!

I wanted to make a St. Patrick's Day Leprechaun Chow Snack Mix that was festive and colorful as well as tasty! You can really use any flavor of Chex Cereal that you like the best, we just happen to like the Rice Chex Cereal the best, so that is why it is in this recipe.

I know a lot of recipes use the marshmallow from the Lucky Charms cereal, but none of my children like or enjoy Lucky CHarms and I didn’t want to be left with a box of cereal that no one would eat (albeit - it would NOT have the marshmallows any long since we would be picking them out), so I searched the cereal shelves for a cereal that had marshmallows and discovered Minecraft Cereal! MineCraftCereal totally had Green Square Marshmallows- THAT in my opinion works SO MUCH Better with this St. Patrick's Day Leprechaun Chow Snack Mix Recipe!

St. Patrick's Day Leprechaun Chow Snack Mix

INGREDIENTS

5 cups Rice Chex Cereal
1/2 cup White Chocolate Melting Buttons (or white chocolate chips)
1/4 cup Peanut Butter (smooth works best)
2 tablespoons Butter
1/3 cup Powdered Sugar
1/4 Green Chocolate Candy
1 cup Green Marshmallows

How To Make Leprechaun (Puppy) Chow Snack Mix

1. Place Chex Cereal into a medium-sized bowl.
2. In a smaller bowl microwave chocolate chips, peanut butter, and butter for 1 minute and then stir together until creamy. If the mixture is not creamy enough, add 1-2 tsp of coconut oil and reheat for about 10-15 seconds and until smooth.
3. Pour the peanut butter mixture over the cereal and mix gently until it is evenly coated.
4. Place half of the cereal mixture into a large plastic bag and add the powder sugar.
5. Shake the bag until it is evenly coated.
6. Place cereal onto a cookie sheet to dry for 15 min.
7. Place the other cereal mixture into the bag and add green food coloring until it is bright and evenly coated.
8. Place cereal mixture onto a separate cookie chest to dry for 15 min.
9. In the serving bowl, mix together both cereal mixtures along with the green marshmallows and the green chocolate-covered candy.

This St. Patrick's Day Leprechaun Chow Snack Mix recipe is so easy! And so, delicious. Really, my husband goes nuts over this tasty snack! He literally asked me why I have never made this before! Thanks to my sister-in-law - this recipe will be on heavy rotation for a great holiday-themed snack to make! I hope you and your little Leprechauns enjoy this fun snack!
