I live in the Midwest and here in Chicago we are still very much deep in the throes of winter. Since we are still experiencing temperatures in the low 20’s in the Midwest, we need to switch up breakfast during these seasonal changes. We simply take the cereal we would normally eat in a bowl with milk during the warmer months and use the same cereal in freshly baked breads to warm up our homes and our bellies on the cold mornings of winter.

I wanted to serve a warm breakfast to my family last week to warm up our bodies and hearts, but also I’m kick-starting good breakfast habits this year. You have no idea how much mornings change and are just so much better when you pull freshly baked bread out of the oven for your family. My kitchen smells delicious and is altogether warmer--in the atmosphere and in our hearts.  It is especially important here in the Midwest when the mornings are in the freezing temperatures and sometimes well below, to serve a warm breakfast to my family. 

What does your family normally like to eat for breakfast? If you are anything like mine, we are always running late and I can’t make a hot breakfast for everyone to enjoy sitting down together.  In the mornings during the week, everyone is leaving the house at different times to catch buses, head to work or head to the classroom.

My husband will eat a cold bowl of cereal every single day and literally has for the past two decades. One of my daughters loves to eat breakfast and my youngest daughter would rather not eat breakfast. My son pretty much thinks he has no time to be bothered with breakfast (teenagers).  I decided my family will be kick-starting their day with a nutritious breakfast this new year!

Sadly, I set a poor example for my children, because I zip out of the house with coffee in hand and no healthy or tasteful breakfast in my tummy. It is a new year and we are creating new breakfast habits! We are going to start our day off with a nutritious breakfast for everyone in my family, and yes, that does include me, the breakfast avoider. I tend to skip breakfast and become tired during the late morning and drink more coffee. This is a very bad habit I have created for myself.

For busy families like mine, Post Cereals make my mornings easier because they pack their cereals with whole grains, proteins, nutrients and fiber. The best action I can plan for my family this new year is to start our day with spoonfuls of goodness.

The importance of a healthy breakfast is underestimated today. Eating a substantial breakfast within the first few hours of waking up is so much healthier for everyone in my family. If I make a couple of loaves of this amazing cereal breakfast bread during the beginning of the week, I actually eat a slice for breakfast and don’t avoid breakfast!

Peanut Butter Chocolate Chip Cereal Bread

Ingredients:

  • 2 tbsp of butter, melted

  • ½ cup organic creamy peanut butter

  • 1 cup real sugar

  • 2 eggs

  • ½ Tbsp vanilla

  • 1 ½ cups milk{I used almond milk) (substitute: 1 cup milk and ½ cup plain yogurt)

  • 2 cups Post Cereals Raisin Bran

  • 2 cups wheat flour

  • 2 tsp. baking powder

  • ¼ tsp. salt

  • ½ cup chips (this could be increased to 1 cup)

Instructions:

  1. Preheat oven to 350 degrees F. Grease 9 x 5" loaf pan and set aside.

  2. Cream butter, peanut butter and sugar together until fluffy.

  3. Mix in eggs until combined. Stir in vanilla.

  4. In a small bowl, mix Post Cereals Raisin Bran and milk together. Then add flour, baking powder, and salt. Add this mixture to the sugar mixture and stir until combined. Gently fold in chocolate chips.

  5. Pour the breakfast bread batter into a sprayed pan.

For the Topping

  • 1/2 cup Post Cereals Raisin Bran

  • 1 tablespoon melted butter

  • 1 tablespoon real sugar

  1. Melt 1 Tbsp of butter, stir in ½ cup of Post Cereals Raisin Bran and 1 tbsp of real sugar. Sprinkle over batter.

  2. Bake in preheated oven for 65-75 minutes, or until a toothpick inserted into center comes out clean. It really depends on your oven! Cool in the pan, then slice the breakfast bread up and make sure you get a slice before your entire family devours it whilst you are washing the loaf pan.

TIPS: Do not over mix your batter or your bread will be very dense. You want to stir the flour mixture the least amount of times possible. Gently fold in chocolate chips, do not stir viciously. The last time I made this bread, I upped the chocolate chips to a bit over 1 cup and the bread took a really long time to bake in the middle. Thus my suggestion for only ½ cup of chocolate chips. I used chocolate chunks this time because there was literally just ½ cup left in the bag I had in the pantry. I think ½ cup to 1 cup is really the perfect portion.

CEREAL BREAKFAST BREAD

To make this amazing cereal breakfast bread even all the more delicious, I usually end up melting a couple of tablespoons of the chocolate chunks with a bit of coconut oil and drizzle over a slice of bread AND I  melt a bit of peanut butter and spread it on a slice as well. So amazing!
