Can you believe half the year is over already? I can’t believe we just celebrated the Fourth of July! But summer is in full swing and I need to feed my hungry children lunch and snacks for the remainder of the summer. One of my kiddo’s favorite lunches is grilled cheese sandwiches. But, my kids are pretty specific about “the how” of the makings of a grilled cheese sandwich. AND, each of my three children like their grilled cheese sandwiches a different way. LOL!

My youngest daughter loves a Classic Grilled Cheese Sandwich. Plain white bread, one slice of American Cheese and grilled lightly in a pan on the stovetop. My son likes a Classic Grilled Cheese as well, but he loves a crunchy sourdough bread and a few slices of various cheeses. He really likes it if I happen to have a Pepperjack Cheese on hand. He likes his sandwich baked in the oven though, no soggy bread for him.

My oldest daughter is my most adventurous and will sample any of my attempts at turning the Classic Grilled Cheese into something super spectacular! This is where the Blueberry Mozzarella Grilled Cheese Sandwich turned into the Summer Favorite Sandwich!

Really though, the best part of this delicious sandwich is how simple they are to make.

I made the Blueberry Spread and added raspberries and blackberries for some extra sweet and extra tart.
Serve these this July 4th as an appetizer, for lunch, for dinner, or even as a side dish for all your summer soirees.

Blueberry Grilled Cheese Sandwiches are exactly

what you’re craving this summer!

Blueberry, Blackberry, Raspberry Mozzarella Grilled Cheese

Really though the best part is how simple these delicious sandwiches are.  Serve these as an appetizer, lunch, dinner or even as a side dish for all your summer soirees. 

INGREDIENTS

  • 1 pint blueberries 1/2 pint raspberries 1/2 pint blackberries*

  • 2 tablespoon honey

  • 1/4 cup balsamic vinegar

  • 1/2 cup sugar

  • 1 lemon juiced and zest the peel into the pot

  • 1 cup shredded mozzarella cheese

  • 3 tablespoon heavy whipping cream

  • 1 tablespoon olive oil

  • 6 thick slices of sourdough bread

  • salt for sprinkling

*You can use all blueberries, all blackberries or all raspberries. The combination is unlimited. Just ensure the amount equals 2 pints.

INSTRUCTIONS

  1. Preheat oven to 400° degrees F.

  2. In a medium saucepan, cook the berries, sugar, honey, balsamic vinegar, and the lemon juice and lemon zest over medium-high heat and bring to a boil. Turn the heat down to a simmer and continue cooking until the mixture thickens and the blueberries burst. Stir often. Remove from heat and let cool a bit.

  3. Mix together the mozzarella cheese, heavy whipping cream, and the 1/2 tablespoon olive oil in a medium bowl. Toast the slices of bread in the oven on a baking sheet for about 5 minutes. Remove, flip the bread slices over and top with a generous portion of the cheese mixture and bake until the cheese melts (this will take approximately 3-5 minutes)

  4. Immediately top with the slightly cooled blueberry spread.

  5. Place another slice of toasted bread on top and press gently. Slice in half.

  6. Serve with any extra blueberry spread on the side

  7. ENJOY
