4th of July American Cake Shakes

Last year while we were in New York, we stayed at this really fun hotel in SOHO. We walked around quite a bit from our hotel, to get to public transportation and on our way one day, I spied a fun restaurant. There was a line out the door and around the corner to this teeny, tiny, little restaurant. We peeked closer to see what the "what" was about. This is when we discovered CAKE SHAKES!

Halloween Bark

The day for tricking and treating is upon us and it is pouring rain outdoors. My kids are so upset. I thought to cheer them up a bit and make some Halloween Bark!

This is literally one of the easiest recipes to throw together in moments. Most likely you will also have all the ingredients in your home already. You could begin with chocolate pieces (a bog of chips would work) or almond bark . . . this I always have in my house - it is VERY versatile. Grab some pretzels and whatever else your taste buds desire.

One Pot Mexican Chicken with Sofritos

I happen to love Mexican food . . . like, love it. My husband and I could eat it every single day. Our children, on the other hand, are not too fond of anything the least bit spicy, and besides chips and salsa, would rather not eat anything related to Mexican food.

What does a momma do to change this? Well, I came up with a recipe they will eat that will satisfy my craving for Mexican! It took a bit of tinkering around with the recipe before I came up with the best tasting Mexican Chicken that everyone would eat. Down to the last little person in my house.

I sit here thinking this morning that 2015 has come to an end and I don't even know how that happened. This past year has literally flown by in a couple blinks. 2015 has been the fastest passing year I have experience in my life. I'm not sure if that is good or not?

I've wished my friends in China and Australia a Happy New Year already and am all set to have a small party here with family tonight. My children area ll super excited as I have told them they can stay up as late as they want (well, really, until I fizzle out and decide to go to bed). But, they know I am a night owl and stay up usually until 2 am, so they have until that time to have loads of fun.

Holiday baking is upon us! For me, that means bringing some memories of my childhood into the holiday to make new memories for my children. I remember the holidays as huge glorious when I was growing up, with food in every room.

Now that the weather is cooling off as we head into fall here in the Windy City, I won't be outdoors as much burning off excess calories; which means that I need to focus a little bit more on building fitness into my fall and winter routines. Don't forget to enjoy a fall cocktail as well. I have the perfect beverage for you to sip on this fall. I will be serving this on Thanksgiving this year. Plus, it goes great with a crowd of guest who pop over for a visit.

Simply start with your favorite white wine, some sugar and loads of fall apples. This sangria has such a pretty color, it is hard to resist. My husband and his family really adore a refreshing sangria and this Apple Sangria has become a new fall favorite.

I'm talking about some refreshing moscow mules!! Love the combination of the mint, lime and booze ... I could actually get inspired and set the table decor around this color combination!!

Peanut Butter Stuffed French Toast

The other day I was pressed for time and literally was going to reheat some leftover pasta for the kids before we had to zip off to school to drop my son off to track. Fifteen minutes after track ends, confirmation classes begin. So, I need to feed the kids before we leave for track practice since I cant' run back home in between the two. The kids groaned when I said leftover pasta and I was left standing in front of the fridge wondering what I could whip up.

During the holidays when everyone is baking their holiday cookies and exchanging cookies with friends and families, I am usually the one who is stammering away . . . um . . . I don't bake . . . apologies, but . . .  um . . . thanks for the cookies! I can bake . . . but I don't enjoy baking.

Unless, it is something I love . . . something that doesn't resemble a holiday cookie . . . which I don't like to eat, because I have yet to find a holiday cookie that tastes good to me. I know, scandalous.

Everyone loves a marshmallow treat bar, but have you ever tried one with a different cereal? Marshmallow treat bars are super easy to make since there is no baking involved. I wanted to create a superheroes marshamallow treat bar for my kids for the movie release of Captain America: The Winter Soldier. What better cereal to use than Cap'n Crunch! Toss in some bright M&M's and I have the perfect Captain Crunch Bars with M&Ms.

Apple Chips {recipe}

These apple chips are super easy to make and so healthy! Which makes it an even better choice. I really can't keep these apple chips in the house long enough. As soon as they are out of the oven and cool enough to eat, my kiddos gobble them up! Even my husband adores apple chips! These apple chips work best with a sweeter apple. My kids love the Gala apple chips best and I would have to agree with them.

Vanilla French Toast {recipe}

When I was younger, I really did not like French Toast, at all. Perhaps the fact that my mother was not such a great chef had something to do with it, I'm not sure. But, I was not a fan of French Toast. I couldn't stand the soggy factor or the eggy taste. Bleck.

After getting married to my husband, {a huge fan of breakfast, I might add}, I had no desire to make any fancy version of French Toast for him either. However, for some odd reason, I happen to have children who adore French Toast. Don't even ask me how that happened, because I have no clue {other than thinking perhaps they are aliens}.

After my son's diagnosis with Sensory ProcessingDisorder(SPD) a decade ago, I tried different therapies and treatments or combinations of both to find what worked best for him. After a full year of intense therapies, he was 'discharged' as a success. That did not mean he was cured, it simply meant I was armed with how to maneuver him through the world at that time.
