I love summer fruit . . . my kids and I (and my husband) literally can't seem to get enough berries . . . blueberries, raspberries, blackberries, strawberries . . . I had so many the other day . . . I baked a tart!
It is so easy to make . . . simply bake your puff pastry about 15, take out of the oven and slather on some jam (I used homemade strawberry jam) pour any amount and type of berries that pleases your palate, pour melted butter mixed with brown sugar over the top and bake again for about 30 minutes.
It was delicious!
Another fruit that seems to get a lot of attention in my house is pomegranate . . . yum . . . I am puckering thinking about them. Tonight for dinner I was cutting up a lovely pomegranate to put in a salad and my daughter walked by peeking into the kitchen and spied half of juicy pomegranate sitting on the counter.
This is her face while enjoying one.
I literally go through at least one pound of strawberries a day in my house . . . I am so not kidding . . . my kids simply adore strawberries. I catch them sneaking strawberries right from the fridge all day long.
Here's my remedy.
